Culinary Manager - Wilmington, NC
PURPOSE:
The purpose of the Culinary Manager of Rep Express is to oversee all operational aspects as they pertain to menu production. The Culinary Manager will work to develop and Implement new menu items for Rep Express while directly managing a staff of Prep Attendants.
ESSENTIAL DUTIES:
•Maintaining a quality menu for Rep Express to offer to their Customers.
•Developing and implementing new menu items to keep Rep Express fresh and new with changing trends.
•Rotation of seasonal splash once a quarter to reflect the season.
•Supervision of all kitchen functions in order to ensure a health rating score of 100% or above.
•Direct Communication with all food and beverage vendors to ensure quality items at the best possible price.
•Maintaining all cold and dry inventories.
•Responsible for all inventory reordering.
•Direct supervision of Prep Attendants.
GENERAL DESCRIPTION:
As Culinary Manager for Rep Express you will be asked to maintain all work areas within the designated kitchen areas clean and well maintained. You will be asked to provide quality menu items for our customers presented in the most attractive way possible. You will be responsible for ensuring that all menu items being prepared in any given day are prepared correctly, on time, and to the correct CSP. You will be asked to consistently develop and implement new menu items in order to keep Rep Express fresh and changing. You will be asked to create a new seasonal splash menu item once a quarter to reflect the season. As Culinary Manager you will have direct supervision of all Culinary Service Providers. It will be your responsibility to implement rules and procedures for these employees to follow. You will also be asked to appoint a lead CSP who will assist you with scheduling, training, kitchen supervision, and logistics. Also as the direct supervisor of the CSPs you will be expected to consistently spend time with these employees to determine any weakness or growth opportunities that may need addressed. You will also be expected to evaluate each CSP once a year to determine any wage increases, promotions, etc. As Culinary Manager it will be your responsibility to maintain good working communication with all food and beverage vendors as to your needs, price issues, and concerns. In addition to this you will be asked to maintain all cold and dry inventories and reorder. The Culinary Manager is the cornerstone to our business and will be called upon to provide Rep Express with core business.
